His culinary ambitions forced him to reach the doorstep of Chef Brian Malarkey. After a clearing interview by Brian Malarkey, Carlos Anthony got the chance to work in the Brian Malarkey team. He worked there and learned so much. He remained a part of the opening seersucker team. Carlos worked for several years with Brian Malarkey at his Malarkey’s Fabric Restaurants, Burlap, Gabardine, and Seersucker.
Continuing his skill development Carlos opened his own restaurant in the year 2013. He opened a restaurant named Salt and Clever. It is his restaurant that is currently running in Hillcrest and Taco Asylum Gourmet Tacos in Costa Mesa.
